Lupin Pizzas Healthy and Tasty

A Gidgegannup food outlet is leading the way in health and nutrition, by offering lupin flour bases for its pizzas.

Scientists at the centre for Food and Genomic Medicine (CFGM) which is based at the Western Australian Institute for Medical Research (WAIMR) have analysed the humble lupin kernel and found that it is high in protein, high in fibre, low in carbohydrates and helps stave off hunger pangs, which helps prevent people from overeating.

The owners of "Sanga Jacks", Chris and Helen Jackson, came up with the idea of developing a lupin base for their pizzas after seeing a story about the health benefits of lupin flour on Channel 7's Today Tonight.

"We talk to customers all the time about how lupin flour can help people lose weight and lower their blood pressure and they agree it's a great idea," Helen said.

The Jacksons spent several months in their Toodyay road premises creating the ideal recipe for their new pizza bases.

"There was quite a lot of trial and error involved in making the product," said Helen. "We've ended up combining lupin flour and wholemeal flour and the result is quite light and very tasty.

The Jacksons are now selling the lupin bases as an optional alternative to their regular pizza bases at "Sanga Jacks" and also supply small pizzas to the local primary school, which is promoting and producing healthier foods through their canteen.

"People can still enjoy their favourite toppings, but know they're doing something good for their bodies," Helen said. "We're the first restaurant in Western Australia to offer something like this."

CFGM Manager, Dr Carolyn Williams said that scientific research has shown the health benefits of regularly eating lupin (which they are calling a 'Superfood" ) included improved blood glucose control, improved insulin sensitivity (both important in diabetes) and reduced blood pressure.
