Lupin Flour Shortbread
This yummy shortbread makes the most of the healthy benefits of lupin flour. Children enjoy helping by cutting out the shortbread shapes.
Ingredients
- ½ cup sugar
- 250g butter
- 2 cups plain flour
- 1 cup lupin flour
- 1 tsp instant coffee
- 1 tbsp water
- 1 egg yolk
- Icing, hundreds and thousands and silver cachous to decorate
Directions
- Cream the butter and sugar in a bowl until light and fluffy. Dissolve the coffee in the water and add to the bowl, mixing until combined. Add egg yolk. Mix in flour then turn onto a clean surface and work dough into a smooth ball. Refrigerate for 10 minutes.
- Preheat oven to 180 degrees celsius.
- Roll out shortbread dough with a rolling pin and cut Christmas stars, hearts, or shapes of your choice using a cookie cutter. Place on a tray lined with baking paper and bake in oven until golden (10 – 15 minutes).
- Decorate with icing, hundreds and thousands or cachous.
